He sent his servant ahead to check out the towns and villages en route to find the best places to find great food and wine before his arrival.
His task was to write ‘Est!’, meaning ‘it is!’ on the doors of places he liked implying that this was a good place for wine. Whilst staying at a Montefiascone inn, the servant tasted wine and he was so impressed by that he wrote ‘Est! Est! Est!’ on the door to describe his satisfaction.
