A Delicious Christmas Cake From Sicily: Buccellato (& Recipe)

Many different cultures have variations of fruit cakes that are traditionally made and served during winter and, in Christian cultures, over Christmas, which makes sense as it allowed delicious fruits to be made available even when they were out of season in the past. Today, we have many more ways to access fruits throughout the year and more options when it comes to sweet things, in general, yet these traditional treats are so firmly connected to the festive season that they remain popular.

Sicily is absolutely no different, it has buccellato: a combination of figs, raisins, dates, nuts (usually almonds) and candied citrus like fruits (like citron) that are baked as either a round cookie shell, as a ring cake, or as small pastries. Its exact origins have been lost to the mists of time and it is uncertain as to when Sicilians began making it but it has been around for centuries. Associated with family milestones, it can be given by Godparents to the parents of their godchild or by best man or maid of honour to the parents of the bride and represents good fortune and prosperity.

Pignoli are Sicilian cookies; a type of macaroon typical to Sicily that is popular cookie throughout all of southern Italy, as well as in Sicilian communities in the US. There are many relatives and similar cookies that can be found through Italy and is also quite like the panellets served on All Saints Day in Catalonia. Made with almond paste, they belong to the amaretto family of biscuits.

These delicious crescent or round biscuits are golden in colour and are studded with golden pine nuts, which are also called pignoli and for which they were named. Moist, soft and chewy, they are, sadly, usually reserved for special occasions such as holidays like Christmas. This is due to the fact that almond paste and pine nuts are the primary ingredients and both are relatively expensive. Caponata is an eggplant (aubergine) salad dish from Sicily that consists of chopped fried eggplant and celery seasoned with sweetened vinegar, with capers in a sweet and sour sauce. There are all sorts of regional variations but the original is, indeed, a Sicilian dish. The scholar, Alberto Denti di Pirajno, suggested that the dish was born aboard a ship as a mariner's breakfast, due to the large amount of vinegar used, which would have acted as a preservative. Giuseppe Coria, an authoritative voice on the history of Sicilian cooking, meanwhile, suggests that its name comes from the Latin word “caupo” (tavern) and was, as such, originally a tavern food for travelers. Sicilian food authority Pino Correnti believes that its name is derived from the Catalan word “caponada”. Despite the lack of clarity around the exact origins and invention of the dish, it is to originally be of Spanish origin.

We've already featured a recipe for granita, a Sicilian semi-frozen dessert but the dish itself is so rich in history and tradition that it seemed a waste not to discuss that at all. This delicious and refreshing dish is made from sugar, water and various flavourings and, while originally from Sicily, is now available all over Italy. It is somewhat like a sorbet or snow cone but has a coarser, more crystalline texture – though the degree of this changes from place to place. There are lots of different flavours but some common and traditional ones include lemon, mandarin orange, jasmine, coffee, almond, mint, strawberry and black mulberry. Chocolate is a particular tradition of the city of Catania.

Cannoli are one of the most famous and beloved of all Italian desserts, particularly among Italian-Americans, and are pastries that come from the Sicily region. The origins can be traced back to the Arabs during the Emirate of Sicily and similar pastries are known to have been popular across the Islamic world during that period. They have been traced back to the Palermo and Messina areas and were traditionally prepared as a treat during Carnevale season. The dessert eventually became a year-round staple throughout Italy. In singular form they are known as cannolo, a word that means "little tube" and they are just that, little tube-shaped fried pastries with creamy, sweet fillings, usually comprised of ricotta.
